Anyone who knows me, knows that I love my sweets! I reaaaaaally really love my sweets…but I have also made some much needed lifestyle changes over the last year and I decided to throw refined sugar out the door. After several months of mourning and detoxing aka chowing down on a ton of fruit to curb my sugar cravings (and the occasional tear), I have come to discover that giving up refined sugar did wonders for my headaches (now lack there of), my waistline (I lost nearly 20 lbs!), and my new-found love for all things in the kitchen. It has been so fun finding and adjusting some of my favorite foods to meet my new diet needs and I want to share some of my favorites with you!
This recipe I got from 2 of may favorite fitness guru’s, the Tone it Up Girls (TIU). If you haven’t heard of these girls, check them out! They have great workouts on their website and they also have great diet plans and recipes to meet all of your needs. http://www.toneitup.com.
1 cup of rolled oats
1 packet of Perfect Fit protein (TIU Girls sell this raw, organic, delicious protein powder but no worries if you don’t have this. I didn’t either and they turned out wonderfully)
Mash the bananas in a bowl and add the rest of the ingredients to it to make a batter
The above are your 3 ingredients but be creative! Add whatever you like, I love to add carob chips, cinnamon, agave nectar, pecans and the list goes on. I make them different every time!
Scoop the batter into balls on a cookie sheet (make sure you grease up the sheet with coconut oil, ghee, or some cooking spray) and flatten.
Bake in the oven at 350 for 15 minutes
This recipe makes about 5 cookies depending on how big you make them. Tip: if you don’t eat all of the cookies at once, store in the fridge so they last longer. The recipe is not only refined sugar-free, it is vegan and could be paleo and gluten-free if you substitute the rolled oats with 1 cup of nuts of your choice.
Hope you enjoy, all this talk of cookies makes me want to go make some now! Enjoy!!
