Nice Cream, You Scream!

A big celebration is in order over here…

This past weekend just so happened to be National Ice cream Day. Over at the Knight household? We celebrated properly with a couple of trips to Baskin Robins. Yup, you heard that right, we went twice. And, I don’t even feel one ounce bad about it :).

We are deeeeep in to Stranger Things this summer and felt called to check out the Scoops Ahoy thing that’s going on over at 31 flavors. I just had to have 2 scoops because I needed to try each flavor (right?) and I was not disappointed. So not disappointed, in fact, that we are going back this evening for another round (wood woop!). I am hoping that this time they will have the Eleven’s Heaven flavor because they were out of it on Friday. I did, however, get to try the Upside Down Praline (my fave) and the S. S. Butterscotch (also super delish).

Demagorgans and pleated pants aside, I love ice cream and if I could eat it everyday, I would. To satisfy my sweet tooth without compromising my health, I have created my own version of ice cream and make that when I am craving something icey, creamy, and delcious. Particularly in the summer time, this (n)ice cream that I make is perfect for a hot day. With it being dairy and processed-refined sugar free, I can shovel it in by the blender full and not think twice about it. These recipes typically only have 2-3 ingredients in them so you can feel good about the fact that you know what is going into your body. This is perfect for the kiddos too! They slurp this shizzz up without even realizing that they are getting their daily recommendation of fruit (good job, mom!).

Tropical Pineapple

  • Frozen pineapple
  • Frozen bananas
  • Full-fat coconut milk (from a can)

Blend all 3 ingredients. Slowly add the coconut milk until you achieve the consistency you like. Serve and eat right away!

Peaches & Cream

  • Frozen Peaches
  • Frozen Bananas
  • Full-fat coconut milk

Blend all 3 ingredients. Slowly add the coconut milk until you achieve the consistency you like. Serve and eat right away!

Blueberry Lavender Heaven

  • Frozen blueberries
  • Coconut cream
  • Coconut water
  • Agave (or sweeter of choice to taste)
  • 4 drops of dōTERRA Lavender oil

Blend all ingredients. Slowly add the coconut water until you achieve the consistency you like. Serve and eat right away!

These are just 3 examples. The possibilities are endless! If you missed National Ice cream day on Sunday, you’re not too late. In fact, it’s never too late to get your ice cream on! Get creative and make your own delish blend, grab the remote, and get to watching Stranger Things!
